Today's a snow day, and a nice warm spiced porridge was on my mind as I woke up to the cold. (and extreme fluctuation of air pressure!)
Here's an easy recipe for porridge made with suji, broken semolina. Although I usually make upma with vegetables, this one is more like sheera, with sweetened, with apples.
1. Heat 1 tbspn ghee in pan and add raw almonds. Add 1/2cup of suji.
2. Stir on low heat until golden brown, and take out to cool.
3. In the same pan, add 1.5 cup of water, cardamon, coriander, ginger, cinnamon, nutmeg-all in powder form, and add 2 diced dates, and half of a ripe apple, cut in small pieces.
4. Let it simmer until apples get soft, add a tbspn of maple syrup, and when it starts to bubble, put on low heat.
5. Add the suji and STIR! Mix away until your prefered texture and devour!
It's said that fruits are better alone, but I desperately wanted the sweetness of the apples! With the spices, it helps digestion so not too much to worry about:)
